Almost too pretty to eat, this delicious Tequila Rose Cake is perfect for special occasions.
– 1 box white cake mix
– 3/4 cup plus 2 Tbsp Tequila Rose
– 3 eggs, beaten
– 1/2 cup vegetable oil
– 3/4 cup puréed strawberries
– 2 cups powdered sugar
– 1 cup butter (1 stick)
Preheat the oven to 350° F. In a large bowl, combine cake mix, ¾ cup Tequila Rose, eggs, and oil. Then, fold puréed strawberries into the mixture. Grease and flour a 10-inch bundt pan, and pour batter into the prepared pan. Bake for 45 minutes to an hour, or until a toothpick inserted in the center of the cake comes out clean. Let cake cool completely.
While cake cools, melt the butter in a saucepan or microwave. Then, sift the powdered sugar into a medium bowl, and add melted butter and remaining 2 Tbsp of Tequila Rose. Beat until smooth and creamy. Last but not least, drizzle icing over cake.
